It's true THE CREAM OF THE MILK IS RICH IN SATURATED FAT.
However, there are three kinds of saturated fat; short chain, medium chain and long chain fatty acids.
Long chain saturated fat is associated with elevated cholesterol and atherosclerosis. Long chain saturated fat as triglyceride is brought by chylomicrons from the intestine to the liver. The liver forms very low density lipoprotein (VLDL) and releases it to the blood. VLDL is eventually converted to low density lipoprotein (LDL). LDL becomes deposited in the subendothelial space and oxidized when there is a break in the integrity of the vascular endothelial lining. Thus dietary long chain saturated fat may lead to elevation of LDL. Elevated LDL is a bullet in a cocked gun. The bullet can kill when the trigger is pulled. The trigger is endothelial cell dysfunction. Recently, elevated long chain saturated fatty acids in the blood has been shown to inhibit the release of insulin from the pancreas.
Medium chain and short chain fatty acids are beneficial for health. Medium chain fatty acids such as lauric acid is converted in the body to the monoglyceride, monolaurine. Monolaurine protects us from viral infections.
Milk contains a lot of short chain fatty acid, butyric acid. Butyric acid is a component of the neurotransmitter, gamma amino butyric acid. Butyric acid as well as other short chain fatty acids have been found to reduce cholesterol synthesis. Volatile short-chain fatty acids (found in full cream milk and produced in the colon by beneficial bacteria or probiotics) may induce colon cancer cell lines to commit suicide (apoptosis). Probiotics that produce short-chain fatty acids require fiber and complex carbohydrates also called prebiotics for their growth. |
